Hi all! Today I want to share with you an amazing recipe for the most crispy cheese crackers! They are simply incredible!!! Thin, layered, cheesy, aromatic, and very tasty. You won’t find these crackers anywhere until you make your own. It’s very simple and easy. They can be made with different flavors using herbs, ground black pepper, hot peppers, etc. They remain just as crispy the next day. I wholeheartedly recommend this recipe!
Ingredients
-130 gr wheat flour
-65 gr semolina
-65 ml ice water
-100 gr semi-hard cheese
-60 gr butter
-1 tablespoon 9% vinegar (I have an apple)
-1 tsp sugar
-1/2 tsp salt
-1/4 tsp baking powder
-dried basil/provence herbs/black pepper, etc.

In a bowl, mix flour, semolina, salt, sugar, and baking powder.

Add butter and rub with your hands until crumbly.

Add grated cheese and stir.

Combine vinegar with ice water and pour it into the dough. Quickly combine everything and knead the dough.

This is how it turns out.

Put it in a bag and refrigerate for 1 hour.

Divide the well-chilled dough into two parts. Roll out thinly and sprinkle with basil.

Once again, lightly walk with a rolling pin.

Cut into crackers. I cut it into triangles.

Bake cheese crackers in a preheated oven at 180C for about 8-10 minutes.

Allow crackers to cool.

Bon appetit!
