Description

Rebel Float Frosted Banana Bread combines the classic comfort of banana bread with the creamy sweetness of a root beer float. This easy, moist loaf features ripe bananas, warm spice, and a smooth frosting that melts perfectly on top. It’s a dessert-style bread that’s trending for 2025.

Ingredients

Ripe bananas (mashed): 3 medium (about 1½ cups)

All-purpose flour: 2 cups

Baking soda: 1 teaspoon

Salt: ½ teaspoon

Cinnamon: ½ teaspoon

Brown sugar: ¾ cup

Butter (melted): ½ cup

Eggs: 2 large

Vanilla extract: 2 teaspoons

Root beer extract: ½ teaspoon

Buttermilk: ¼ cup

Cream cheese (softened): 3 oz

Powdered sugar: 1 cup

Heavy cream: 2 tablespoons

Instructions

1. Preheat oven to 350°F (175°C) and line a loaf pan with parchment paper.

2. Mash bananas in a large bowl until smooth. Mix in melted butter, brown sugar, eggs, vanilla extract, and root beer extract.

3. Whisk flour, baking soda, salt, and cinnamon in a separate bowl. Fold dry ingredients into the banana mixture.

4. Add buttermilk and stir gently until combined. Pour batter into prepared pan.

5. Bake for 55 minutes or until a toothpick inserted in the center comes out clean.

6. Let bread cool completely on a rack.

7. Beat cream cheese, powdered sugar, and heavy cream until smooth. Spread frosting evenly over cooled loaf.

8. Chill for 20 minutes before slicing and serving.

Notes

Use very ripe bananas for maximum flavor and moisture.

Do not overmix to keep texture light.

Chill before slicing for neat presentation.

Store leftovers in an airtight container for up to five days.
