Sesame Honey Glazed Chicken Matzo Ball Bowls
Ingredients:
- 1 lb boneless, skinless chicken thighs, cut into bite-sized pieces
- 1 cup matzo meal
- 4 large eggs
- 1/4 cup sesame oil
- 1/4 cup soy sauce
- 2 tablespoons honey
- 2 cloves garlic, minced
- 1 tablespoon fresh ginger, grated
- 4 cups chicken broth
- 1 cup baby bok choy, chopped
- 2 green onions, thinly sliced
- Sesame seeds for garnish
Instructions:
- In a bowl, mix matzo meal, eggs, and a pinch of salt. Form into small balls and set aside.
- In a large pot, combine chicken broth, sesame oil, soy sauce, honey, garlic, and ginger. Bring to a simmer.
- Gently drop the matzo balls into the simmering broth. Cover and cook for about 20 minutes until they float to the surface.
- In a separate pan, stir-fry chicken until browned and cooked through.
- Add bok choy to the broth and simmer until wilted.
- Serve the sesame honey glazed chicken over the matzo ball and broth mixture.
- Garnish with green onions and sesame seeds.
