Scallion Pancake Challah Grilled Cheese

  • 1/2 loaf challah bread, sliced
  • 2 scallion pancakes (store-bought or homemade)
  • 4 slices provolone cheese
  • 4 slices pastrami or smoked turkey
  • 2 tablespoons unsalted butter
  • Dijon mustard for dipping


  1. Lay out the challah slices and place a scallion pancake on each slice.
  2. Layer provolone cheese and pastrami on half of the slices and top with the remaining slices to make sandwiches.
  3. In a skillet over medium heat, melt butter. Grill the sandwiches until the bread is golden brown and the cheese is melted.
  4. Slice in half and serve with a side of Dijon mustard for dipping.
