Scallion Pancake Challah Grilled Cheese
Ingredients:
- 1/2 loaf challah bread, sliced
- 2 scallion pancakes (store-bought or homemade)
- 4 slices provolone cheese
- 4 slices pastrami or smoked turkey
- 2 tablespoons unsalted butter
- Dijon mustard for dipping
Instructions:
- Lay out the challah slices and place a scallion pancake on each slice.
- Layer provolone cheese and pastrami on half of the slices and top with the remaining slices to make sandwiches.
- In a skillet over medium heat, melt butter. Grill the sandwiches until the bread is golden brown and the cheese is melted.
- Slice in half and serve with a side of Dijon mustard for dipping.
